Banana Bread-ish Granola

Don’t get me wrong, I LOVE banana bread. Writing this makes my mouth water. But, I’m trying to gain some kind of balance in my life where bread doesnt take over my entire day of munching. This banana bread-ish granola satifies my craving, but healthier, over Greek yogurt or simply with oat milk.

BANANA BREAD-ISH GRANOLA

Makes about 1 quart

3 cups  rolled oats

1 tbsp    cinnamon

½ tsp   ground nutmeg

½ tsp   salt

½ cup  your favorite nuts, chopped

¼ cup  chia seeds

1 cup   overripe banana, mashed (approx. 2 bananas)

¼ cup maple syrup

¼ cup  butter, melted

1 tsp    vanilla extract


TO MAKE THE GRANOLA,

  1. Preheat the oven to 325F and line a baking pan with parchment paper.

  2. Mix the oats, cinnamon, nutmeg, salt, nuts, and chia together in a bowl. Set aside.

  3. Melt the butter and add the maple syrup and coffee.

  4. In a separate bowl, mash the bananas and add to the butter mix.

  5. Pour the wet ingredients into the dry ingredients and mix until everything is well combined.

  6. Spread the granola evenly onto a parchment lined baking pan and bake for 20 minutes. Mix the granola and bake for another 15-20 minutes.
